Quick question: is there some kind of guidelines posted for figuring out rotation orders when setting up bones? I especially need to know when setting up for a limb that's going off at an odd angle...

The first axis is the twist axis, usually the one that runs along the bone from the joint. The other two should be ordered with the one most likely to hit 90 degrees last, to reduce the chance of gimbal lock. So a human, facing front, would use y(along the length of the bone)z(little or no side-to-side)x(bend, likely to have a wide range of values) for the knee.
