Does anyone understand the steps to make a Quad model?

INSERT / Vertex model...
then create a square / rectangle, and then extrude it into a cube, then (CTRL+F) to fill the top and bottom polygons,...
That gives you a starting "Box" to begin the process of "box modelling".

There are many different tools and features in Carrara's vertex room to enable you to produce "quad" surfaces from simply extruding, to more complex surfaces created using lines for latitude longitude, or paths and shapes, and lathing.
