I use DAZ to create my book covers but I wasn't sure, do I need to have the interactive license for the things I use. I don't completely understand the jargon.

You don't need interactive licence to use rendered images for book covers or any other commercial purposes, the standard EULA covers that. It's the same for videos you created.
Interactive licence is needed when you would need to redistribute the 3D model itself: for example when you use the 3D model in a game (not just 2D sprites), when you distribute your game (for free or commercially) you have to include the 3D model, so you need an interactive licence.
