Is there a way to make the Bryce 7 interface larger (mainly the arrows you click on to open menus).

No, it's always full size of display. The wider your monitor, the smaller the arrows get. I'm not very happy with this restriction. I began with Bryce on an 800 px wide monitor, meanwhile it grew to 1920 px and the controls got accordingly smaller - though the wider workspace is great.
