I looked for a way to do it

Had no such luck. Can you even remove materials from within bryce?

    You mean so that your object is default grey?

    If so, then yes. In the material lab underneath the nano preview, there is a button that will re-set any selected object back to a default flat grey.

    Highlighted below with the red circle.
