Figures Jump Around

Why do figures suddenly jump out of position when I attempt to select a body part for posing?

Very annoying.

    I'm not sure what you mean - one possibility is that you are accidentally dragging and not just clicking to select, if you are working in the viewport, but you really need to give a fuller description and perhaps some screenshots of what you are seeing.

    Are you using the Universal Selector? If so, change to the normal Node Selector. The universal selector is set up to allow you to move the figure parts when IK is active.
