Grabbed a bunch of Hexagon tutorials during the couponia sale.  Hard to pass up at about US $2 each.

What kinds of beginner projects do you recommend for someone migrating from Carrara to Hexagon for modeling 3D props and figures?

Props and architecture, things that don't need rigging, are probably easiest to start with. Mostly if you've done very much modeling in Carrara, you're mostly just learning the new toolset and translating what you know to the new software. Most of the basic ideas about how to model 3D objects don't really change from one software to the next. It's just about learning how to do the things you know in a new way.

I would suggest a refrigerator. Lots of different simple parts to model and very easy to learn rigging.
