Shader chaning (texture maps) how to stop it?

I don't know what it's called if it's UV maps or Texture maps, but anyway once you add a shader to an object old cutouts don't work anymore. Is there a way to apply a shader, but stop it from chaning the textures map layout so old cutouts still work?

I'm not quite sure what you mean, but if you want to aply a new shader while (as far as makes sense) retaining the maps hold down the ctrl key (cmd for a Mac) when you double-click, then in the dialogue that opens select ignore for the maps (meaning it will ignore the map settings in the preset, leaving the existing assignments in place - assuming they have equivalents in the new shader).
