Help with Strand Hair Editor

I'm using the Strand Hair Editor for the first time, following a web tutorial that doesn't quite cover the weirdness I'm seeing with it. Can anyone offer me some advice on how to tame this beast? I spent almost an hour coming out some hair lines and making it look the way I wanted, then I turned on the actual Hair view and realized there's a spider sitting on the poor girl's head! Hadn't planned on making Miss Muffet.

It's a matter of interpolation. Right now, you've got guides going in different directions, which is causing the editor to average their direction for certain hairs. Raise Single Guide Strength and hairs will be more influenced by a single guide than the average of multiple guides.

Is there a way to reopen the strand editor once you close it or is the hair style pretty much baked at that point?
With the hair selected, go to Edit -> Object -> Edit Strand-Based Hair.
