I read somewhere-- maybe in here, I don't recall-- that anything posted on Facebook becomes the property of Facebook, to do with as it pleases.

If that's true, I wouldn't post ANY pictures on Facebook, at all, ever.

Not entirely accurate. Facebook, tumblr, and similar social media sites are given non-exclusive rights to use your images to promote their services. You still retain copyrights and ownership. However, I have friends and acquaintances who found their art used by third parties who do partner with Facebook (through apps like games). Facebook and its ilk aren't given ownership of the images. And their third party partners don't have the same rights to them. So my friends have disputed and had those instances where third parties illegally using their images taken down. I haven't heard of anyone refusing to do so once proven. The exact wording of using what you post in Facebook is this:

For content that is covered by intellectual property rights, like photos and videos (IP content), you specifically give us the following permission, subject to your privacy and application settings: you grant us a non-exclusive, transferable, sub-licensable, royalty-free, worldwide license to use any IP content that you post on or in connection with Facebook (IP License). This IP License ends when you delete your IP content or your account unless your content has been shared with others, and they have not deleted it.

One thing I've heard, though, is Instagram has changed their policies and images posted using that service does become their property. Not sure if this is true and I haven't checked in depth since I don't use that service.

Me, I just put large watermarks on my artwork that it would be very unlikely for anyone to use them and removing them would take a lot of effort even through Photoshop. It discourages them, but it's not a guarantee, of course.
