    • 1kg chicken carcasses or wings

    Method

    • STEP 1

      Tip everything into a large saucepan with a pinch of salt then cover with 2 litres of water. Bring to the boil, then reduce to a simmer and cook for 3 hours, skimming when needed. Pass through a sieve and use for your intended recipe. Will keep in the fridge for a week and for three months in the freezer.

    I tend to make my stock in a slow cooker,  as you can leave that simmering away all day without any problem  and no need to keep watching to make sure of the water level. In fact you can reduce the amount of water added as it doesn't evaporate from a good slow cooker.  I leave mine simmering away for most of the day.

    I ordered something from Ebay on November 18.  The seller has not even shipped the item yet.  I'm going to request a refund.

    Hope it comes out OK.  Ebay ain't Amazon.indecision  I play the ebay game like I treat going to a casino.  Expect to lose, delight in winning.

    PS: I've only been to a casino once, and that was to pick up an $850 NY State LOTTO winnings at at the official LOTTO office there.  I looked around in amazement of the lights and sounds and smells and thought wow is this what it's like to throw one's money away?  I can see why it's tempting.  I am a little concerned though by the fact that the state LOTTO office is located in a casino.surprise  Are they actively helping the casino industry?  And tempting people to gamble even bigger?  Shame, shame, shame.frown

    Although I have even been frustrated by Amazon a couple of times with late shipments.  But when I looked carefully, I discovered that the product was shipped by a 2nd party.  So now when I have a choice between Amazon supplier or 2nd party shipper, I always choose Amazon despite the small extra cost.  And I almost always buy products included in their "Prime" program.  And once when a shipment directly from Amazon Pantry went completely missing, it was Amazon that contacted me first and said they would be returning my money.yes  I know there are Amazon detractors but I have no beef with Amazon's customer policy and I don't work for them.

    Complaint:  Arghhh... while I was composing my post above, I was eating breakfast at my computer desk.  Unfortunately, I had left the large skillet and remainder of diced fried potatoes, onions, & ham on the stove on low flame.  It was only when the smell of burning came to my attention 20 minutes later that I flew back into the kitchen to confirm, the blackened pan.sad  This is the 2nd time that poor pan has been abused like that.no  It started life as a wonderful ceramic non-stick pan but after the first burn, was similar in adhesion to a dirty cast iron skillet, and now three years later, after a second burn I'm afraid anything I cook in it henceforth will become permanently bonded to the pan bottom.  (*sigh)  Time for a new pan.crying 

    Non-complaint:  Oh, look!  I have a brand new, unused, identical pan that has been sitting in my cupboard for the last 2 years, for just such emergencies.  Am I clever or what?smiley

    Now, the only question is: is it worth trying to eat these carbonized potatoes, ham and onions?indecision

    Continuing complaint:  I really don't need a new lid, but when I place the old lid onto the shiny new pan, it looks pretty sorry.frown  Years and years of baked on grease on the glass lid.  Rust between the glass and the metal rim.  The assembly looks like a May/December wedding.  Sure, sure, it could be used.  And probably will be for a while, but it's time to renew my search for a proper 10 inch lid in the same style.  The company apparently stopped making the 10 inch lids several years ago.  I can find matching 9.5" and 12" lids but no more 10" lids without buying a completely new pan in a different style because they don't even sell this style 10" pan with a lid anymore.  Sure, sure, style shouldn't matter, but I'm a bit obsessive/compulsive about some things.  I have had this set for many many years.  I scrimped and saved and bought it piece by piece.  I love it, and I want it to fit in exactly with my existing set.  (*sigh*) 1st world problems.indecision

    You can use a low sodium chicken broth...it's by Swanson.

    Complaint:  Temperature is dropping quickly toward freezing.  Rain has been coming down since midnight.  The snow's about to begin folks.  The snackbar is open. Get your refreshments now!  Blizzard on the way.  

    Non-complaint:  I was able to save a small cup of diced potatoes, ham and onions from my pan burn debacle.  Had to pick out the two cups of food at the bottom of the pan that were a bit too carbonized but the rest is still palatable.yes  However, the pan is beyond redemption.frown It be non-stick no more.  It be not even the same color no more.sad

    So... basically zombie mink are rising up from their graves in Denmark... who knew the zombie apocalypse would be so cute?

    What the article was trying to say... (or wasn't... who knows, it's fun to freak people out a bit)... was that the rotting corpses of dead mink were floating to the surface of a mass mink grave.

    But they worded it as though they were rising from the dead.

    This is exactly how I pictured any zombie apocalypse in 2020 going down I suppose... like maybe it would start with SeaWorld dolphins being bitten by a drowning Covid infected squirrel and the virus would mutate into a zombie virus in the dolphins and all of Florida would be a zombie infested mess in a couple of days... it sounds cute in the beginning, but goes to hell straight away.

    Well... I guess just avoid hugging stray mink or dolphins for a while until this whole year blows over.

    ...I do the same with Newegg. It sometimes limits the selection but I usually get what I order in about three days without having to pay for express shipping as they are "down the road" (I-5) in California which is in the same UPS delivery zone) . 

    With eBay you really have to watch where the item ships from. A lot of those "good deals" tend to ship from China, Malaysia, or India. 

    Here in Oregon there are lottery offices in the main cities. You can redeem up to 600$ in winnings at any pub (closed for now) or market. Above that amount, you have to go to one a local Lottery Service Centre.

    When you're feeling sick from flu or a fever, the sodium is one of the things that will make you feel better.  It also encourages subcutaneous water retention.  Long term, that's not a good thing, but if you have a fever, you're really more concerned with surviving the night, right?

    I have never used tomato paste as a base in chicken noodle soup!

    2-3 cups of chicken stock or broth (if sick, don't care about the sodium; if not sick, then get low-sodium type), two chicken legs, two breast pieces with bone-in.  Broth is easily available at grocery stores; you don't need to boil your Thanksgiving bird's bones all day for this (although it's delicious if you do!). 

    Optionally, add any or all of the following:  One fat onion, a cup of carrots chopped medium/fork-sized, 2 to 4 garlic cloves sliced about 1/8", and fresh ground pepper to taste.  I also put a cup of corn in my soup.  Turkey can be substituted for chicken, or it can be mixed with chicken.

    Put it all into a 7 Quart crock pot top off with water, 2-4 cups, put the lid on, and set the crock to low for 6-8 hours; stirring is optional after 6 hours.  If you have less time to wait, set the crock to high for 2 to 2.5 hours, then stir and set it to low for 2 more hours.  If you're adding Bullion cubes, start with 4 and taste at stirring time.  If you don't add bullion, then the only salt that will be in your soup will be from the broth and whatever method was used to process the chicken or turkey. 

    If you're sick, you'll probably want to add some salt; maybe something from a teaspoon to a tablespoon, or do what I do and add an eighth of a teaspoon of some fancy big grains of Himalayan pink salt to your bowl at serving time. 

    About 30 minutes before the soup is done, boil your pasta in a separate pot or container and add to the crock pot.  Cooking dry pasta in your soup will soak up the liquid in your soup and when you're sick, that's the last thing you want.  You want a nice, hot broth.  Everything else is a bonus! 

    Pro Tip:  DON'T use "tubes" such as macaroni or mostacelli for your chicken soup; you could get your tongue or lips burned if the soup in the little noodle-tubes is too hot.  I prefer to use regular "number 8 spaghetti" for my soups.  Snap the pasta in half or in thirds before you cook it so that it's easy to eat with a spoon when it's in the soup.

    Serves:  About 14 people.  Hey, it's a 7-Quart Crock Pot! 

    Pro Tip #2:  If sick, don't waste your time with skinned or boneless chicken in your soup.  The chicken will just be dry and bland, and you want your survival meal to be delicious.  When you're sick, you need fluids, so mission success with soup when it makes you want another bowl!

    Indeed!  Chicken Soup, capitalized for its importance, can make things all better; at least for a little while!

    It's either that or you listened to me in an older Complaint thread when I suggested that whenever you buy a fry pan set, that you also buy one spare of the most often-used size.  I do remember you had a Complaint about that...one pan in the set always gets snaffygoob'd (that's a technical term) by the cooking oils and whatnot, and then you end up with a pan set with 3 good pans and one black-sheep dead one.

    I'm mildly certain that I suggested the extra pan, maybe along with "Don't use Pam!".  If so, you're welcome!  If not, thank you to the other forum member who did suggest those things!

    Well, even with a Black-sheep pan, you'll still be able to cook and eat "1st World Style".  In a time of Covid that ain't doing too bad, right?

    Yes, Swanson makes a good one.  But be ALSO aware that your soup with low or no sodium will not stay fresh as long in the fridge.  On the day of cooking, freeze anything you want to save for more than 4 days.  Higher sodium soups have kept longer in the fridge for me.

    But really, I wouldn't agonize over the sodium while you're trying to keep the flu from killing you.  It's not like you're eating a super-sized bag of chips at one sitting and besides that, anything you do will probably have less sodium in it than anything from Campbell's!

    I jest, Campbells actually does soup really really well these days, even though it is canned!

    You're lucky you have no pets.  If it's Teflon in that ceramic pan, it could have released enough gas to be deadly to small pets, particularly birds.  Probably not enough to kill something human-sized, though; as evidenced by your survival of this "Great Fry Pan Singe".  wink

    Hmm   why you say that.   I have Porridge for breakfast almost every morning, mostly proper porridge but sometime I cheat and use an instant porridge pot  ( like pot noodles they are)  I also quite often buy wholemeal Oat bread, or wholemeal bread that contains some oatmeal.  Very good for you is oatmeal.

    Mmmm, Quaker instant oatmeal, with honey and just a dash of milk.  Breakfast of ancient ones.yes

    And the non-instant version of Quaker oatmeal makes hella good chocolate chip/oatmeal cookies.  (mother's recipe)

    And the empty tube makes good storage for Legos.

    @Subtropic_Pixel:  Sorry about the snow, it was held up by warm air traffic from the south.indecision  Rained all day yesterday and last night.  Our snow (extreme western NY State) didn't start until early this morning, now about a half inch.  No refunds, sorry.

    Non-complaint:  It's cold enough outside now that the furnace pumps out enough heat long enough to keep my half of the house warm (68-70F) too. (explanation:  the single thermostat is located in the other apartment.  When the outside temperature is between 35 and 60F I have to use an electric heater to supplement the furnace that only runs for short periods and there's not enough inter-apartment circulation to keep my apartment above 60F).frown

    Complaint:  These two apartments use inter-apartment air circulation which means I'm breathing the same air as a family of four who also have frequent non-Covid savvy visitors.  They also cook many aromatic foods, and produce many types of smoke, and keep rabbits indoors in the winter.sad  I'd thought about suggesting that they eat the rabbits and stop burning leaves indoors.  Also, considering the Covid thing, I'd thought about asking them to not breathe out, but couldn't find a nice way to say it or a practical way to implement it.indecision

  • Complaint:  The snow's is finally here.  Been lightly fluffy all day but now it's coming down heavily and the wind's starting to blow.  Images from Cleveland predict what it's going to be like here in a couple hours.

    Non-complaint:  It should all be over by Wednesday night, and cleared away from the roads by Thursday morning when I'm scheduled to be picked up for a ride to the dentist.  Oh, yay.indecision

    Oats are a cereal,  as is wheat and Barley and rice and even corn.   so you have Oatmeal   wheatmeal  and corn meal

    Eating liars is fun, but they lack the vitamins and minerals needed for a well balanced diet. They are more of a snack-food.

    Have my Wacom drivers uninstalled right now while we try further troubleshooting to see if these mystery crashes are related to a recent problem some programs have been having with them.  If it is, then great I can work again - but would need to try and find a driver that doesn't have these problems (or wait for Wacom to update them).  If it isn't, then hnnn more mucking around trying to find the solution.

    Do you use virtualbox at all? I ran into a weird issue, if using wacom, at the same time as virtualbox, it just keeps eating more and more and more RAM until it crashed.
